Puddings enrich the diversity of textures and flavors you can enjoy in green smoothies. Puddings are thicker smoothie that you can eat with a spoon. Green puddings generally don’t contain any water and are often thickened with mangoes, blueberries, persimmons, chia seeds, dates, coconut, etc.. We recommend using a tamper, which often comes packaged with blender, to help mix these thicker smoothies as you blend. The following recipes have been prepared with a Vitamix but I assume it could be made in other blenders.
Wild Green Pudding
1 large mango, peeled, seeded, and sliced
1 ripe peach
Handful strawberries
1 bunch (1/4lbs) lambsquarters
No water needed.
Yields 1 quart
Kent Mango Bliss
2 Kent mangoes
1 bunch chard, stems removed
1 pear
1 banana
Serve with kiwi.
Yields 3 cups
Green Pudding

Hi I’m very excited to visit your website and learn about green smoothies. Please share with me more about micro greens. What is it exactly? You say in your green soup video that is lettuce and Kale seeds sprout. Do just sprout the seeds?

Microgreens are a tiny form of edible greens produced from the seeds of vegetables, herbs or other plants, they are not the same as sprouts. The most importnat differences is in the way they are produced. Sprouts are often grown in a sporting jar with water, in very low light conditions and are consumed as a tangled mass of roots and underdeveloped leaf buds. Microgreens are young leafy green plants which are germinated from a moisture pad or soil. They grow vertically and can be bigger than sprouts with a much more developed flavors, colors and textures. Legumes are ideal for water/jar sprouting and plants like kale and lettuce are better as micro greens.
