Please enjoy these raw food snacks which do not require dehydration or a high speed blender and are very simple to make.

Sergei's Hummus

2 cups garbanzo beans, sprouted for 1 day
1 cup tomatoes, chopped
1 cup celery, chopped
2 tablespoons olive oil
1-2 tablespoons (dry) or 1 cup (fresh) dill or basil
1-2 tablespoons lime or lemon juice
Hot pepper to taste
Celtic sea salt to taste (optional)
2-3 cloves of garlic

Bell-pepper Guacamole

Blend the following ingredients in a food processor:
3   large RIPE avocados
1   ripe colored bell-pepper
1   medium tomato
¼  cup lemon juice
1   spicy pepper
½  teaspoon sea salt (optional)
Place the contents of the food processor into a large bowl.
Chop the following ingredients:
½  bunch green onion
1   bunch parsley

Mix the chopped ingredients into the mixture already in the bowl.

Sergei's  Truffles
1 cup walnuts (don't soak for this recipe)
1/2 cup of your favorite pitted dates
1/4 cup water
4 Tablespoons raw carob
1/4 teaspoons salt

Blend walnuts and dates in a food processor till the  mixture is smooth. Mix in the raw carob and water. Shape the mixture into small balls and roll in carob or coconut. Decorate with your favorite fruit.

Amazing Almonds
9 cups almonds
2 cups Nama Shoya
5 cups water

Keep almonds submerged in this solution for eight hours. Then mix them with the following.
3 Tablespoons garlic powder
5 Tablespoons onion powder
5 Tablespoons lemon juice

Live Fries
Peel and slice one large jicama so it looks like French fries.
Combine in a bowl with:
1 tablespoon onion powder
2 tablespoons extra virgin olive oil
1 tablespoon paprika
sea salt to taste
Serves 5. We recommend serving live fries with Tomato Basil Sauce (please see
below)

Tomato Basil Sauce for the Fries:
Blend 2 cups fresh chopped tomatoes.
Add the following ingredients and blend:
1 cup sun-dried tomatoes
¾ cup chopped fresh basil
juice of 1 medium lemon
2 tablespoon olive oil
4 dates (or some raisins)
1-2 cloves garlic
Serves 9.

Mint Aid
1 quart water
1/3 cup Meyer lemon juice
5 sprigs fresh mint
1 1/2 tablespoons raw honey

Juice lemons and mix thoroughly with honey. You may need to blend lemon juice and honey in a blender to get the honey to dissolve. Add mint and transfer into a quart jar. Add enough water to fill a jar. Mix again by shaking. Chill and serve.
